A Japanese knife can be a good first kitchen knife if its size, material, and care requirements fit the cook. The label “Japanese” alone does not tell you how easy a particular knife will be to use.
Start with a versatile shape
A santoku and a gyuto (chef’s knife) are both general-purpose shapes used for vegetables, meat, and fish. Choose a length that feels controlled on your cutting board. ZWILLING suggests a santoku around 15–18 cm and offers gyuto in several sizes; hand size and workspace still matter.
Read the material and product instructions
Stainless steel is generally more resistant to rust than carbon steel, but it can still corrode if left dirty or wet. Carbon steel needs more attentive drying and may develop a dark patina over time. Neither material alone guarantees longer edge retention or easier sharpening: steel, heat treatment, blade geometry, and use vary by model.
Plan for simple, regular care
Follow the maker’s instructions for the specific model.
- Wash after use, especially after acidic or salty foods, and dry the blade and handle thoroughly.
- Check the product page before using a dishwasher. Some knives are rated dishwasher-safe, while hand washing is recommended for longer life.
- Use a suitable wood or plastic cutting board. Avoid glass and ceramic boards, frozen foods, bones, and twisting the edge in hard ingredients unless the knife is designed for that task.
- Sharpen when cutting performance declines, using a method compatible with the blade, or use a professional sharpening service.
A practical first purchase
Compare the actual product’s size, weight, handle, steel, permitted tasks, and care guide. A comfortable general-purpose santoku or gyuto with instructions you can follow is a more useful starting point than a claim of extreme sharpness. If a listing omits the steel or care requirements, ask the seller before buying.
