Black Plate or White? 30 Americans Judged the Same 6 Dishes on Both
30 Americans judged the same 6 dishes on a black plate and a white one. The black plate looked more appetizing for 4 of them.
Lab studies on plate color point in opposite directions. One found the same dessert tasted sweeter on a white plate. A later one found desserts were liked more on black. Neither compared everyday dishes on both. This page does, one dish at a time.
Sushi drew the widest margin: 22 of 30 picked the black plate

Top reason for picking the black plate: contrast with the food, named by 15. Top reason for picking the white plate: clean, fresh look. The narrowest result was for the chocolate cake.
The same two plates won on some dishes and lost on others. Each side gave a different kind of reason, such as a restaurant look on one and a familiar look on the other. So no single plate color flatters every meal. Which dishes did the white plate hold on to?

Tomato pasta: 19 of 30. Top reason: familiar look. Chocolate cake: 17 of 30. Top reason: clean, fresh look.
A plate that looks familiar can beat one that looks striking. Familiar look and clean look were among the reasons given for picking white. So black is not a safe default for every dish a buyer might serve. Does owning a black plate change the picks?

8 of the 9 who already own a black or dark dinner plate picked black on four or more of the 6 dishes. Among the 21 who do not, 8 did.
Liking black on the table went with owning a black plate. These photos cannot show which came first. For someone who has never owned a dark plate, the picks were split between the two colors. So what would these buyers serve on a single black plate?

11 of 30 would serve steak on a single black plate. The median they would pay for one plate used for guests: $45. Only 1 named a dish outside the six.
A single plate has to carry one kind of meal, so the dish decides the color. Before buying one plate, it helps to decide which meal it is for. The plate is then chosen for that dish, not for the table in general.

About this survey
Survey
MJC Plate Color Survey
Conducted by
Modern Japan Crafts
Respondents
30 adults living in the United States who cook at home at least once a week
Fielded
October 2026
Method
Online survey. Each dish was shot on a black plate and a white plate under the same light. The left–right order of each pair was randomized. Respondents gave each reason in their own words, without seeing options. Two people coded the reasons independently.
Questions
1. Here is the same dish on two plates. Which one looks more appetizing to you? (asked for each of the six dishes) 2. Why did you pick that one? (open-ended, asked after each dish) 3. If you owned one black plate, which of these dishes would you serve on it? 4. What is the most you would pay for one plate to use with guests? (USD)
